This vintage opens with waves of blackberry and plum, with notes of coffee, toasted oak and maybe a touch of black pepper and sage following. Upon ingestion, at first one tastes ripe blackberry, currants, a touch of dark chocolate with some well-rounded tannins.
Food Pairing Notes
Open with a cheese and charcuterie plate - Roquefort, aged Gouda and cheddar, and/or Camembert with boudin, torchon of duck foie gras and jambon. Lamb shanks, BBQ short ribs or a simple stew-lamb or beef, will pair well as the main. For dessert a Salted Caramel Chocolate Torte would be perfect.
