Our Mariposa is fermented cold to retain as much of the aromatics as possible. You will be greeted with a nose redolent in fresh ripe strawberries, watermelon, dark cherries and maybe a touch of sage. An initial surge of sweet raspberries and cherry is quickly tempered by the refreshing acidity that follows.

Food Pairing Notes
Try starting with goat cheese spread on croutons with a black olive and anchovy tapenade. Follow this with a main course of Lobster Paella. For dessert, you can go with a traditional pairing of cherry cheesecake, but why not branch out a bit and make a tasty spiced pear and pomegranate medley as well.
